Blind Assessment

Richly aromatic, sweetly savory. Pineapple kefir, cocoa nib, lavender, pink grapefruit zest, lemon verbena in aroma and cup. Briskly sweet-savory acidity; plush, satiny mouthfeel. Especially long, lingering finish that extends the promise of the cup.

Notes

Produced by Don Hernando Laverde of Finca La Guirnalda, entirely of the Castillo variety of Arabica, and processed at La Palma y Tucan by the anaerobic natural method, in which the whole fruit is fermented in tanks with limited oxygen before drying, also in the whole fruit. In this case, lactic acid was added to the fermentation step. Bottom Line

A lactic-anaerobic Colombia with a sweet pineapple tanginess throughout and undertones of cocoa nib, complex citrus, and spice-toned florals.
