Blind Assessment
Spice-toned, richly sweet-savory. POG, pink peppercorn, lemon verbena, oak, frankincense in aroma and cup. Gentle, round acidity; plush, satiny mouthfeel. Notes of POG and pink peppercorn are front and center in the brisk finish.
Notes
Produced by Brayan Alvear, entirely of the Pink Bourbon variety of Arabica, and processed by co-fermenting the whole cherries with dehydrated coconut and coconut water, then drying them in the whole fruit with lemon peel. Based in Livingston, Montana, RamsHead Coffee Roasters is a family-owned company that specializes in direct trade microlot coffees. For more information, visit www.ramsheadcoffee.com.
Bottom Line
A uniquely composed Colombia co-ferment with a spice throughline supported by sweet herbs and resiny aromatics.
