Blind Assessment
Citrus-laced, delicately spiced. Tangerine, lemon verbena, raw honey, saffron, toffee in aroma and cup. Brightly sweet structure with lively, sparkling acidity; dense, silky mouthfeel. The satiating finish is anchored by notes of tangerine and toffee.
Notes
Produced by Rigoberto Herrera at Granja La Esperanza in Colombia, entirely of the Java variety of Arabica, and processed by the anaerobic natural method, in which the whole fruit is fermented in tanks with limited oxygen before drying, also in the whole fruit. Corvus Coffee Roasters is based in Denver, Colorado and specializes in rare and exclusive coffees from some of the finest growers in the world. Corvus particularly focuses on processing methods and selective harvesting, which result in small, seasonal micro-lots of uniquely sweet, vibrant, and clean flavor profiles. Bottom Line
A vivid citrus-and-spice profile, this anaerobic Colombia bursts with bright tangerine tones and warm, sweet undercurrents of toffee — complex and original.
