Tangy-sweet, richly aromatic. Tamarind, salted caramel, cedar, magnolia, lemon yogurt in aroma and cup. Briskly sweet-tart acidity; very full, creamy-smooth mouthfeel. Tart-leaning finish with ballast from caramel notes.
Produced by Edward Giraldo of Finca La Esperanza, entirely of the Typica variety of Arabica, and processed by the anaerobic washed method, in which the fermentation step occurs in a hermetically sealed vessel before the beans are washed and dried.
