Blind Assessment
Stone fruit-driven, lushly floral. White nectarine, orange blossom, honeycomb, saffron, almond in aroma and cup. Sweetly crisp structure with gentle, round; full, syrupy-smooth mouthfeel. Finish is driven by notes of white nectarine and almond ensconced by decisive narcissus.

Produced by Juan Puerta of Finca La Sirena, entirely of the Castillo variety of Arabica, and processed by a proprietary anaerobic method called the “peach osmotic dehydration process,” which involves immersing the whole fruit in a solution containing peaches, creating an osmotic pressure that draws moisture out of the coffee beans while simultaneously infusing them with the flavors and aromas of the peach.
