Blind Assessment: Explosively floral, tropical. Star jasmine, dark chocolate, pineapple kefir, pistachio, sandalwood in aroma and cup. Deeply sweet structure with lactic undertones and ripe, floral acidity; plush, syrupy-smooth mouthfeel. Notes of star jasmine lead the zesty finish, complicated by gentle kefir-like suggestions.
Notes: Produced by Elias & Shady Bayter of the Vergel Family Farm entirely of the admired Java variety of Arabica and processed by the anaerobic natural method (whole fruit subject to oxygen-restricted fermentation before drying). Brioso Coffee is a micro-roaster, coffee bar and café in the Discovery District of Columbus, Ohio. Visit www.briosocoffee.com for more information.
The Bottom Line: A deep, complex Colombia processed by an elaborate experimental anaerobic method that encourages engaging lactic tones enveloped in rich fruit and floral sweetness.
