Blind Assessment
Tropical-toned, lavishly floral. Passionfruit, orange blossom, maple syrup, turmeric, roasted almond in aroma and cup. Sweet-tart structure with juicy, tropical acidity; plush, creamy mouthfeel. The finish highlights passionfruit and roasted almond, deepening to turmeric and orange blossom in the long.
Notes
Produced by Diofanor Ruiz, entirely of the Java variety of Arabica, and processed by the carbonic maceration method, which involves fermenting the whole fruit in a sealed container that has been flushed with CO2, then drying in the whole fruit. Corvus Coffee Roasters is based in Denver, Colorado and specializes in rare and exclusive coffees from some of the finest growers in the world. Corvus particularly focuses on processing methods and selective harvesting, which result in small, seasonal micro-lots of uniquely sweet, vibrant, and clean flavor profiles. Bottom Line
A tropical-fruit-forward Colombia, this carbonic maceration Java offers layers of floral sweetness and nutty depth, complicated by a turmeric-like sweet earthiness — uniquely composed, enigmatic, very compelling.
