Blind Assessment: Complex, multi-layered, crisply sweet-tart. Apricot, almond, honeysuckle, oak, maple syrup in aroma and cup. Sweetly tart structure with juicy, bright acidity; viscous, syrupy mouthfeel. Resonant, flavor-saturated finish that consolidates to apricot and oak in the long.
Notes: Produced by Satreya Amambi of the Wanoja Coop in the Kamojang highlands of Java and processed by the wet, or washed, method. Mother Pigeons is a Jarkata, Indonesia-based roaster and cafe. For more information, visit www.motherpigeons.com.
The Bottom Line: A high-toned coffee from West Java with a particularly bright structure, syrupy mouthfeel and emphasis on attractive stone fruit and sweet floral notes.
