Blind Assessment
Evaluated as espresso. Pungently bright, lively. Ripe citrus, anise, dark chocolate, fresh-cut cedar in aroma and small cup. Lightly syrupy mouthfeel; flavor saturates a crisply dry finish. In three parts milk the chocolate blooms gently with continued hints of citrusy brightness.
Notes
This blend is 75% Papua New Guinea coffee from the Whagi Valley in the Western Highlands, and 25% is Guatemalan coffee from a ‘slow-food’ presidium representing four cooperatives and over 150 farmers in Huehuetenango. Thirty-Thirty is a small-batch coffee roasting company located in Peoria, Illinois that is committed to sourcing the finest green coffees and to expressing the individuality and character of those coffees from the roasting process to the cup.
