Blind Assessment

Evaluated as espresso. Intensely pungent in the aroma: cedar and sweet chocolate. Lightly syrupy in mouthfeel and full-flavored in the small cup: continuing cedar notes and a chocolate that turns bittersweet and carries into the finish with a complicating hint of walnut. Flavor rounds and sweetens in two parts milk, but impressively retains its pungent, cedar-and-chocolate character.

Notes

This blend combines coffee processed by the traditional Brazilian natural or dry method, in which the coffee is dried inside the fruit, with coffee from India of the Robusta species processed by the wet or washed method in which the fruit skin and pulp are removed before drying. Founded in 2011, Soyuz Coffee Roasting is the specialty coffee branch of parent company Soyuz Corporation. Based in Kaliningrad, Russia, Soyuz offers three unique brands of coffee: Mon Ami, Paretto and Barista.
