Bali Yeast Honey Edi Kadek Lot
|Roaster Location:||Taipei, Taiwan|
|Coffee Origin:||Bali, Indonesia|
|Review Date:||May 2023|
Caramelly, delicately sweet-savory. Peach, caramel, shiitake, redwood, clover flowers in aroma and cup. Gently brisk and sweet-tart in structure; satiny in mouthfeel. The finish is wispy and delicate: peach and caramel.
Produced in the central highlands of Bali from the S795 variety of Arabica and processed by a hybrid method involving fermentation with cultured yeasts before drying with the “honey” or fruit flesh still adhering to the beans. Kopi Ibrik is a tiny, boutique coffee roaster and cafe in Taiwan that aims to synthesize the Turkish coffee brewing tradition with contemporary specialty coffee attitudes and practices. Walks a delicate, engaging line between caramelly sweetness and shiitake-like savory, with a hint of flowers at the top.
