Evaluated as espresso. Deep, rich, chocolate- and cedar-toned. Gently scorched cedar, plum, chocolate, and a hint of anise in aroma and small cup. Syrupy mouthfeel. Chocolate and cedar carry into a sweet but drying finish. Dominates two parts milk, but the fruit-toned chocolate rounds and softens in four parts.
Evaluated as espresso. Sweet, complex and juicy. Candied lemon, blackberry, orange, sweet cocoa in the aroma. Lightly syrupy mouthfeel with a complimentary dry, astringent edge. Sweet cocoa transforms into a bittersweet, lemon-toned baker’s chocolate in the small cup, complicated by suggestions of slightly scorched cedar and flowers. The citrus-toned chocolate nicely rounds and fattens in two parts milk.
A well balanced, moderately dark-roasted cup. Aromatic hints of fruit, dark chocolate and cocoa nibs. In the cup softly balanced acidity, suggestions of tangerine, honey and cocoa tinged nut, accompanied by a sustained fruity sweetness. A distinct floral quality develops as the cup cools. The dry, pungent dark chocolate hinted at in the aroma reemerges in a mildly astringent finish.
