Blind Assessment
Richly aromatic, sweetly tart. Guava, young ginger, maraschino cherry, chocolate syrup, lemon-thyme in aroma and cup. Juicy, sparkling acidity; plush, syrupy-smooth mouthfeel. Very long, flavor-saturated, tropical-leaning finish.

A special lot called “El Cañal” produced by Doña Francisca and Oscar Chacon of Finca Las Lajas, entirely of the Villa Sarchi variety of Arabica, and processed by a proprietary “double diamond” method, which includes whole-fruit anaerobic fermentation.
