Blind Assessment

Sweetly and richly fermenty: rye whisky, lilac-like flowers, lemon custard, carob and almond suggestions in aroma and cup. Tart, lively acidity; plush mouthfeel. Flavor saturates a clean though richly drying finish.

Notes

Yirgacheffe is a coffee region in southern Ethiopia that produces distinctive coffees from traditional varieties of Arabica long grown in the region. This is a “natural” or dry-processed version, meaning the beans were dried inside the fruit, encouraging a flavor profile that is less predictable and deeper than the more familiar wet-processed floral- and citrus-toned Yirgacheffe profile. Like virtually all Ethiopia coffees, this coffee is produced by villagers on small, garden plots interplanted with food and other subsistence crops. This Yirgacheffe was sourced and exported by Levelup Coffee, a relatively new international coffee production company that produces mid-sized lots of green coffees with consistent and distinctive cup profiles. It is the creation of the team that developed Ninety Plus, the admired Panama- and Ethiopia-based producer of small-lot, high-end coffees.
