關於 Coffee Review

成立於1997年,本機構是第一個將類似葡萄酒的百分制評分系統轉換成咖啡評分系統、並引進咖啡

業界的單位,Coffee Review 一貫的任務就是協助消費者辨認並購買品質卓越的咖啡,並在評鑑的同

時,幫助增加市場消費需求,並提高因為投注相對較多時間、精力及成本來製作高品質咖啡的農民

及咖啡烘焙商的收入。

Coffee Review每個月也會發行不同主題的相關評鑑,由主編Kenneth Davids領導杯測及品嚐團隊,

Davids先生著有三本關於咖啡的重要著作,並發行了四個語言版本,他的職業生涯曾經到訪各個咖

啡產區、曾經替咖啡從業人員及老饕們舉辦過數百場的發表會及訓練課程。另外在每個月份,在部

落格專區也會張貼若干與評鑑主題無關的其他咖啡產業訊息。

在過去17年來,C offee R eview 已然成為全球最受尊崇、最具影響力、最廣受讀者支持的咖啡主題出

版網站,每年平均有一百萬個點閱率,其中有30% 的點閱率是來自於美國以外的國家。

評鑑標準與機制

所有的送評單品咖啡豆都依照SCAA杯測程序進行:樣品編碼後盲測。在「盲品測試Blind

Assessment」段落中的給分以及風味描述都在受測樣品品名揭曉之前,就由Davids先生以及負

責杯測的團隊們完成,不過「附註Notes」及「建議飲用對象Who Should Drink It」兩段文字則

是在樣品品名揭曉之後才進行編輯。

送評的espresso用豆則依照WBC的沖煮標準數據來萃取,「加奶表現With Milk」這個項目則是

以一個shot 30c.c.的espresso配上3倍的未發泡熱牛奶來評比。

解讀評分方式以及烘焙深度數值

單項評分以及總分:各個單項評分〔如香氣、酸度等等〕是以1~10分方式給分,依據各單項的密

集度、質感以及獨特性來給予高低分評價,總分則是介於50~100分的範圍給分。以下是示意表:

6 – 7 80 – 84 Fair to Good 尚可-好
5 – 6 75 – 79 Poor to Fair 差-尚可
3 – 5 70 – 74 Poor 差
1 – 3 <70 Defective 有瑕疵的

解讀烘焙深度數值:Agtron Whole Bean M-Basic數值是由Agtron M-Basic〔Gourmet Scale〕機型所

讀取出的咖啡豆或咖啡粉糖化數值,有時是兩種數值都會提供。評鑑報告中給予的烘焙深度名稱

〔中焙、深焙等〕則是依據SCAA規章中關於M-Basic或Gourmet Agtron Whole Bean M-Basic Scale的

命名法來訂定。
