Blind Assessment
Uniquely composed, citrus driven, sweetly fermenty. Lemongrass, dried pineapple, vanilla orchid, wild honey, cacao husk in aroma and cup. Bright, tropical acidity; creamy-lithe mouthfeel. The finish tapering from citrus florals into cocoa and spice notes.

Produced by Wilder Lazo, entirely of the Geisha variety of Arabica, and processed by the anaerobic cofermentation method, in which the whole cherries are fermented with lemongrass in an oxygen-free environment.
