Blind Assessment: Gently fruit-toned, wood-framed. Guava, fresh-cut fir, narcissus, cocoa nib, lemon thyme in aroma and cup. Sweet-tart structure with brisk acidity; delicate, velvety mouthfeel. Cocoa nib and fir carry the crisp, quiet finish.
Notes: Produced from coffees of the Chiang Mai 80, Catuai and Typica varieties of Arabica and processed by the white honey method, in which a small amount of fruit flesh is left on the bean during drying.
