Blind Assessment
Richly sweet, fruit-forward and gently fermenty. Black cherry, boozy guava, magnolia, caramelized almond and baking chocolate in aroma and cup. Softly wine-toned acidity; full, velvety mouthfeel. The finish is resonant and sweet, with notes of black cherry, magnolia and caramelized almond.
Notes
Produced at the roaster’s farm, entirely of the Red Bourbon variety of Arabica, and processed by the anaerobic natural method, in which the whole fruit is fermented in tanks with limited oxygen before drying, also in the whole fruit. Visit @shuang_yi on Instagram for more information.
