Blind Assessment
Deep, complex, original. Sweet fruit (watermelon, strawberry), halvah, cocoa, candy-cap mushroom in aroma and cup. Sweet-tart-savory in structure; plush, satiny mouthfeel. Finish is crisp yet resonant, centered around halvah and cashew.
Notes
The Sumé is Revel Coffee’s interpretation of the classic Mocha-Java blend. This iteration combines a fruit-forward natural-processed coffee from Ethiopia and a classic washed-and-wet-hulled coffee from Sumatra. Revel Coffee is a micro-roaster located in Billings, Montana. Its motto: “Quality is paramount — a difference you can revel in.” Visit www.revelcoffee.com or call 406-534-9621 for more information.
Bottom Line
A particularly inspired update of the traditional Mocha-Java blend formula. It combines the sweet fruit of an Ethiopia natural and the gamey vigor of a wet-hulled Sumatra in a sensory package both surprising and coherent.
