Blind Assessment
Vivid, intricately aromatic and juicy. Red currant, white nectarine, mandarin, narcissus and cocoa nib in aroma and cup. Bright, succulent acidity; viscous, very syrupy mouthfeel. The finish is exceptionally long and articulate, with red currant, narcissus and cocoa nib notes.
Notes
This coffee earned Finalist recognition in the Experimental category, International division, of the inaugural Kenneth Davids Cup. Comprised entirely of the S-09 variety of Arabica, and processed by a dry fermentation washed method, in which depulped coffee beans ferment in a tank without added water so native microbes can break down the sticky mucilage layer. Dou Zhai Coffee & Roastery is a Taiwan-based specialty coffee roaster and cafe. Visit www.douzhaicafe.com for more information.
Bottom Line
A striking Peru SL09 whose dry fermentation heightens its vivid fruit and floral character while preserving the clarity and precision of an exquisite washed coffee.
