Blind Assessment
Richly floral, brilliantly layered. White peach, guava, jasmine, bergamot and raw cacao in aroma and cup. Vibrant, champagne-like acidity; lush, nectar-smooth mouthfeel. The finish is extraordinarily long, unfolding in waves of tropical fruit, citrus blossom and rich cacao.
Notes
Produced by Jose David of Mama Cata Estate, entirely of the Geisha variety of Arabica, and processed by the anaerobic natural method, in which the whole fruit is fermented in tanks with limited oxygen before drying, also in the whole fruit. Paradise prides itself on quality and freshness, craft-roasting coffees in small batches only after orders are placed. Visit www.paradiseroasters.com or call 808-498-4048 for more information.
Bottom Line
A beautifully realized Panama Geisha that marries the exuberant fruit expression of anaerobic natural processing with the variety's hallmark floral elegance, resulting in a cup of exceptional complexity, refinement and persistence.
