Blind Assessment
Exuberantly aromatic, fruit-saturated and intricately floral. Raspberry, passionfruit, pink grapefruit, tuberose and vanilla bean in aroma and cup. Vibrant, high-toned acidity; plush, satiny-smooth mouthfeel. The finish is exceptionally long and perfumed, with raspberry, jasmine and vanilla bean lingering.
Notes
This coffee earned Finalist recognition in the Experimental category, U.S. division, of the inaugural Kenneth Davids Cup. Produced by Jamison Savage of Finca Deborah, entirely of the Geisha variety of Arabica, and processed by the carbonic maceration method, which involves fermenting whole cherries in a sealed container that has been flushed with CO2, then drying in the whole fruit.Corvus Coffee Roasters is based in Denver, Colorado and specializes in rare and exclusive coffees from some of the finest growers in the world. Corvus particularly focuses on processing methods and selective harvesting, which result in small, seasonal micro-lots of uniquely sweet, vibrant, and clean flavor profiles. Bottom Line
A vivid, high-impact Panama Geisha in which carbonic maceration intensifies the variety’s tropical fruit and florals, yet leaves its distinctive elegance intact.
