Produced by smallholding farmers of Gold Mountain Coffee Growers, from trees of the Catuai, Caturra, Pacas, Pache and Yellow Bourbon varieties of Arabica, and processed by the carbonic maceration method, which involves fermenting whole cherries in a sealed container that has been flushed with CO2, then drying in the whole fruit.
