Blind Assessment
Fine structure and balance throughout. The quietly complex aromatics – orange, nut, fresh-cut fir, lavender-like flowers, caramel – are pleasing and persistent, but the excellence of this coffee resides above all in its fine structure – sweet-toned acidity, silky mouthfeel, long, perfectly clean, flavor-saturated finish.
Notes
Cooperative La Providencia is located in Jinotega, in the northern part of Nicaragua near Rio Coco and at the foot of the Kilambé Massif Mountains. It combines farmers from Wiwili and Kilambé but it brands its certified organic coffee as Wiwili, the name of Nicaragua’s first coffee cooperative founded in the 1920’s. True Beans is an artisan small-batch roaster located in the southern California city of Long Beach that emphasizes social responsibility and sells only organic and sustainable coffees. Visit
Who Should Drink It
Those who prefer balance to intensity; smooth is perhaps the most overused word in beverage description, but this coffee defines it.
