Blind Assessment
Fruit-sweet, multilayered. Dried strawberry, cocoa syrup, mandarin zest, jasmine, cedar in aroma and cup. Gently bright acidity; smooth, syrupy mouthfeel. Strawberry and sweet cocoa notes commingle in the finish.

Produced by the Bayter Family of El Vergel Estate, from trees of the Castillo, Colombia and Caturra varieties of Arabica, and processed by the anaerobic cofermentation method, in which the whole cherries are first fermented in plastic bags with strawberries and yeast, then in open air, and are finally dried in the whole fruit. Exported by Forest Coffee, which owns El Vegel Estate.
