Blind Assessment
Crisply sweet, floral nut-toned. Almond, black cherry, jasmine, tangerine zest, fir in aroma and cup. Briskly sweet acidity; lightly satiny, smooth mouthfeel. Sweetly wood-framed finish with undertones of almond and jasmine.
Notes
Produced by Epifanio Castañón of Finca Los Limones, from trees of the Bourbon and Typica varieties of Arabica, and processed by the washed method (fruit skin and pulp removed before drying). Colibrije Specialty Coffee is a Mexico City-based specialty coffee roaster working with locally grown coffees. Visit colibrijecoffee.com for more information.
Bottom Line
An engaging washed Chiapas coffee that highlights floral lift and gentle fruit sweetness, finishing with a delicate nut-toned and softly wood-accented profile.
