Blind Assessment
Crisply fruit-toned, sweetly herbaceous. Notes of red apple, baking chocolate, chamomile, lime zest, and agave syrup in aroma and cup. Briskly sweet acidity; plush, syrupy mouthfeel. The finish lingers quietly with fruit sweetness and chocolate depth.
Notes
Produced by Cristian Jimenez of La Cienega Farm, entirely of the Pacamara variety of Arabica, and processed by the honey method, in which some of the fruit flesh is left on the beans during the drying process. Utopian Coffee is a specialty roaster based in Fort Wayne, Indiana. Visit www.utopiancoffee.com for more information.
Bottom Line
A nuanced Pacamara honey from Chiapas — gently savory and sweet, with chamomile-like herbal tones framing soft fruit and baking chocolate in a well-integrated cup.
