Blind Assessment
Robust and gently nut-toned. Notes of baking chocolate, dried cherry, magnolia, macadamia and cedar in aroma and cup. Gentle, round acidity; weighty, velvety-smooth body. The finish is long and flavorful, with baking chocolate and sweet nut tones and a touch of stone fruit sweetness.
Notes
Produced by Raynaldo Cancino of Cancino Family Farm, entirely of the Typica variety of Arabica and processed by the washed method (fruit skin and flesh removed from the beans before drying). Consists entirely of peaberries, a kind of coffee bean that results when the coffee fruit develops only a single oval bean rather than the usual pair of flat-sided beans.
