Blind Assessment
Deep-toned, rounded and sweetly fruit-driven. Black plum, baked apple, bittersweet chocolate, roasted pecan and molasses in aroma and cup. Soft, gently wine-toned acidity; full, velvety-smooth mouthfeel. The finish is sweet and persistent, with notes of black plum, bittersweet chocolate and roasted pecan.
Notes
Produced at Finca El Desengaño, entirely of the Bourbon variety of Arabica, and processed by the anaerobic natural method, in which the whole fruit is fermented in tanks with limited oxygen before drying on raised beds at the foot of Volcan de Agua. This is the only coffee farm within Antigua’s city limits. This coffee can be purchased onsite at Finca El Bosque, located at Avenida El Desengaño No. 2, Antigua Guatemala.
Bottom Line
A richly developed anaerobic-natural Bourbon with dark fruit and caramelized sweetness at its center, anchored by chocolate and nut tones.
