Blind Assessment
Sweetly layered and fruity. Baked apple, apricot, tangerine, almond butter and cocoa powder in aroma and cup. Gently bright acidity; syrupy-smooth mouthfeel. The finish is softly persistent, carrying fruit sweetness and nutty cocoa tones.
Notes
Produced by smallholding members of the Cooperativa Integral Agrícola Chicoj, from trees of the Bourbon, Catimor, Caturra, Maragogype and Pache varieties of Arabica, and processed by the yellow honey method (some fruit flesh left on the beans during the drying process). Intuition Coffee is a specialty roaster and cafe based in Peoria, Illinois. Visit www.intuitioncoffee.com for more information.
Bottom Line
A well-executed Guatemala honey process that balances ripe fruit and nut tones with a very smooth mouthfeel — comforting, engaging, satisfying.
