Blind Assessment: Fruit-forward, sweetly fermenty. Plum wine, almond butter, sassafras, oak, baking chocolate in aroma and cup. Sweet-savory structure with gentle, fruity acidity; full, viscous mouthfeel. Chocolaty finish, supported by notes of plum wine and sassafras.
Notes: Produced at Finca Potosi from trees of the rare Tabi variety of Arabica and processed by the anaerobic natural method (whole fruit subject to oxygen-restricted fermentation before drying).
