Blind Assessment
Distinctive, richly aromatic and intriguingly savory-sweet. Dried apricot, orange marmalade, beeswax, magnolia and smoked cocoa in aroma and cup. Briskly sweet acidity; full, velvety mouthfeel. The finish is uniquely composed, with dried apricot, beeswax and smoked cocoa notes persisting into the long.
Notes
Produced by smallholding farmers, from trees of local landrace varieties of Arabica, and processed by an experimental honey-natural method that incorporates beeswax smoke during anaerobic fermentation. Everjoy Cafe is a Taiwan-based specialty coffee roaster and cafe. Visit Everjoy’s website for more information.
Bottom Line
An unconventional Yirgacheffe whose beeswax-smoke processing overlays classic fruit and floral character with distinctive waxy, smoky cocoa tones in a richly textured cup.
