Blind Assessment

Aromatically rich, sweetly fruit-forward. Lychee, yellow peach, pink grapefruit, baking chocolate and honeysuckle in aroma and cup. Gently bright acidity; full, syrupy mouthfeel. The finish is lingering and fruit-saturated, with notes of peach, tropical fruit and baking chocolate.

roduced by Alex and Diego Bermúdez of Finca El Paraiso, entirely of the Castillo variety of Arabica, and processed by a proprietary thermal shock method and washed 36-hour anaerobic fermentation. Decaffeinated by the ethyl acetate (sugarcane) method. A remarkably expressive decaf whose vivid stone fruit and tropical character belie its caffeine-free status, with innovative processing adding sweetness, texture and aromatic intensity.
