Blind Assessment
Sweet, complex, deep-toned. Cocoa nib, red apple, walnut butter, candied violet, cedar in aroma and cup. Gently bright acidity; plush, creamy mouthfeel. Very long, lingering, flavor-saturated finish.

Produced by smallholding farmers under the direction of Juan Ramon, from trees of the Caturra and Catuai varieties of Arabica, and processed by the low-oxygen honey method, in which some of the fruit flesh is left on the beans during the drying process, which was conducted under low-oxygen conditions.
