Blind Assessment
Sweetly intricate, balanced. Red plum, jasmine, milk chocolate, panela, and lime zest in aroma and cup. Vibrant, integrated acidity; very full, syrupy mouthfeel. The finish is resonant, with chocolate and plum sweetness lingering into the long.
Notes
Produced by Héctor Esteban Sánchez of Finca Mirazù, from trees of the Geisha variety of Arabica combined with a field blend of Geisha, Caturra and Catuai (that the farmer calls “Catajo”), and processed by a proprietary “raisin honey” method, in which the beans are dried in the whole fruit until they appear raisin-like, then the fruit skin is removed, leaving some of the mucillage on the beans during the drying process.
