Blind Assessment
Fragrant, fruit-forward. Pink grapefruit, nectarine, ginger blossom, cocoa nib, mulled wine in aroma and cup. Bright, ringing acidity; supple, viscous mouthfeel. The finish is gently lingering with floral-citrus sweetness with undertones of cocoa nib.
Notes
Produced by Doña Francisca and Oscar Chacon of Finca Las Lajas, entirely of the Sarchimor variety of Arabica, and processed by a proprietary “double diamond” method, which includes whole-fruit anaerobic fermentation. The Westside Coffee Company is a Utah-based specialty coffee roaster and cafe. Visit www.thewestsidecoffeecompany.com for more information.
Bottom Line
A deftly executed Costa Rica Sarchimor lot from Las Lajas that highlights vibrant fruit, floral nuance and polished structure, offering an accessible entry into the Chacóns’ experimental processing style.
