Blind Assessment
Deeply sweet and balanced. Blackberry, cocoa powder, molasses, cedar, and candied orange zest in aroma and cup. Crisp, wine-toned acidity; syrupy-smooth body. Clean, resonant finish with leading notes of cocoa powder and candied orange zest.
Notes
Produced by Oscar and Francisca Chacon entirely from trees of the Caturra variety of Arabica, and processed by the black honey method, in which most of the fruit flesh is left on the beans during the drying process. Regulator Roasting Company is a small specialty roaster and coffee shop in Illinois, founded by Dave and Courtney Grimm. Visit www.regulatorroatingco.com for more information.
Bottom Line
A classic black-honey Costa Rica — darkly sweet, fruit-toned and plush, with bright acidity as ballast.
