Blind Assessment
Richly aromatic, sweetly tart. Guava, young ginger, maraschino cherry, chocolate syrup, lemon-thyme in aroma and cup. Juicy, sparkling acidity; plush, syrupy-smooth mouthfeel. Very long, flavor-saturated, tropical-leaning finish.

Produced by Doña Francisca and Oscar Chacon of Finca Las Lajas, entirely of the Villa Sarchi variety of Arabica grown on the small farm within Las Lajas called "El Cañal,” and processed by a proprietary “double diamond” method, which includes whole-fruit anaerobic fermentation.
