Blind Assessment
Expressive, fruit-forward, intricately sweet. Notes of dried raspberry, lychee, tea rose, panela, cocoa nib in aroma and cup. Juicy, high-toned acidity; syrupy, very buoyant mouthfeel. The finish is long and saturated with red fruit and floral sweetness.
Notes
This exceptional coffee was selected as the No. 29 coffee on Coffee Review’s list of the Top 50 Coffees of 2025. Produced by Wilder Lazo of Finca Dinastia, entirely of the Pink Bourbon variety of Arabica, and processed by the anaerobic honey method, in which some of the fruit flesh is removed from the beans, then fermented in an oxygen-free environment before drying. Big Shoulders Coffee is a Chicago roaster dedicated to a fresh-roasted, honest approach that lets great coffee speak for itself. Bottom Line
A vibrant and meticulously processed Pink Bourbon that centers lush fruit, deep-toned florals, and a cocoa nib throughline held in precise balance.
