Blind Assessment
Juicy, aromatic and sweetly spice-toned. Red plum, guava, blood orange, pink peppercorn and dark chocolate in aroma and cup. Bright, fruit-toned acidity; plush, syrupy mouthfeel. The finish is persistent, centering red plum, pink peppercorn and dark chocolate.
Notes
Produced by Elkin Guzman of Finca El Mirador, entirely of the Tabi variety of Arabica, and processed by the natural method, with the addition of a thermal shock step (a rapid temperature shift during the fermentation and rinsing stages). Indaba Coffee is a Spokane, Washington-based specialty coffee roaster and café founded in 2009, known for thoughtfully sourced coffees and a community-centered mission built around hospitality and social impact. Bottom Line
An intriguing thermal-shock Colombia Tabi that balances juicy tropical and stone fruit with savory spice and dark chocolate, giving the cup an appealing tension between sweet and savory impulses.
