Blind Assessment
Intensely aromatic, fruit-saturated and complex. Red currant, blood orange, black cherry, rose and dark chocolate in aroma and cup. Vibrant, juicy acidity; plush, syrupy-smooth mouthfeel. The finish is exceptionally long and resonant, with lingering red currant, rose and dark chocolate notes.
Notes
This coffee earned Finalist recognition in the Experimental category, U.S. division, of the inaugural Kenneth Davids Cup. Produced by Boris Herrera of Esmeralda Negra by Cabra Noir, entirely of the Ombligon variety of Arabica, and processed by the washed method with the addition of a thermal shock step (a rapid temperature shift during the fermentation and rinsing stages). Klatch Coffee is an award-winning small-batch roasting company in the Los Angeles area whose resident barista and trainer, Heather Perry, won both the 2003 and 2007 United States Barista Championships brewing a Klatch Coffee espresso blend. Bottom Line
A thrilling thermal-shock rare variety, Ombligon, that combines saturated red fruit, florals and chocolate with exceptional flavor intensity, lively structure and impressive balance.
