Produced by Miguel Barboa of Finca La Miel, entirely of the Wush Wush variety of Arabica, and processed by a proprietary “dynamic natural” method in collaboration with Colors of Nature at La Cereza Station. The method involves a multi-phase fermentation protocol conducted in bioreactors with continuous monitoring of temperature, oxygen, pH, sugar, and alcohol levels and adding microbial cultures (isolated from the farm’s own ecosystem) in controlled stages.
