Blind Assessment
Sweet-toned, richly aromatic. Notes of ripe plum, cherry cordial, hibiscus, molasses and clove. Sweetly tart acidity; full, syrupy-smooth mouthfeel. The finish is long with persistent fruit and spice notes.
Notes
Produced by Jorge Rojas of Finca La Roca, entirely of the Chiroso variety of Arabica, and processed by the anaerobic natural method, in which the whole fruit is fermented with limited oxygen before drying. Big Shoulders Coffee is a Chicago roaster dedicated to a fresh-roasted, honest approach that lets great coffee speak for itself. Bottom Line
A bold anaerobic Chiroso — ripe fruit intensity meets floral complexity and syrupy depth.
