Blind Assessment
Perfumed, succulent and intriguingly savory-sweet. Yellow plum, red currant, pomelo, narcissus and young ginger in aroma and cup. Gently fruit-toned acidity; satiny-smooth, buoyant mouthfeel. The finish is long and animated, with leading notes of yellow plum, narcissus and young ginger.
Notes
Produced by Brayan Alvear of Finca Las Palmas, entirely of the Chiroso variety of Arabica, and processed by the anaerobic washed method, in which the fermentation step occurs in a hermetically sealed vessel before the beans are washed and dried. Scent Pursuit Roasters is a micro-roaster based in Taipei. Email pm16ms23@gmail.com to inquire about the coffee.
Bottom Line
A distinctive Chiroso whose anaerobic fermentation builds fruit intensity and aromatic spice around the variety’s high-toned floral character.
