Blind Assessment
Seductive and sweet-toned. Passionfruit, green mango and star jasmine, supported by panela, cocoa powder and sandalwood. Acidity is balanced, gently tart yet; body is creamy and supple. The finish persists with florals, tropical fruit and a deep cocoa sweetness.
Notes
Produced by the Gutierrez Family of Finca La Estrella, entirely of the Gesha variety of Arabica, and processed by the anaerobic natural method, in which the whole fruit is fermented with limited oxygen before drying. Founded by the co-owner of Olympia Coffee, Oliver Stormshak, who has worked in the coffee industry for more than three decades, Oliver’s Custom Coffee features rare varietals, experimental lots, and custom fermentations. Bottom Line
A finely tuned anaerobic natural Gesha from Huila — tropical, floral and grounded in sweet cocoa, offering both depth and character.
