Blind Assessment
Intense spice and floral notes. Cinnamon, lavender, cocoa nib, sweet alyssum, plum in aroma and cup. Sweet, very suavely balanced structure; silky mouthfeel. Citrus surfaces in a round, deep, balanced finish.
Notes
Produced by Wilton Benitez at Granja Paraiso 92 farms entirely of the Red Bourbon variety of Arabica, and processed by a complexly detailed version of the double-anaerobic method (sealed-tank fermentation of the whole fruit with the addition of yeast strains), which includes sterilizing the cherries with ozone gas and ultraviolet light. Decaffeinated by the ethyl acetate (EA) method in Colombia. Imported by Pebble Coffee. Dou Zhai Coffee & Roastery is a Taiwan-based specialty coffee roaster and cafe. Bottom Line
An exceptional coffee that rewards patience. The lush power of the structure distracts at first from the complex originality of the aromatics.
