Blind Assessment
Boozy-sweet, richly layered. Caramelized pineapple, toffee, pink grapefruit zest, baking chocolate and candied ginger in aroma and cup. Gently bright, fruit-toned acidity; plush, syrupy body. The finish is long and resonant, centered around caramel, citrus and resonant chocolate notes.

Produced by Julio Cesar of Finca Milano, entirely of the Caturra variety of Arabica, and processed by a proprietary “Nitro Toffee” culturing fermentation that involves first sealing the whole cherries in a bioreactor and inoculating with a custom mix of yeast and bacteria. The environment is flushed with nitrogen to optimize microbial metabolic activity, while temperature, acidity, and sugar content are closely tracked.
