Blind Assessment
Lush, orchestral, uniquely savory. Ginger blossom, pineapple guava, frankincense, pistachio, fennel seed, hint of cumin in aroma and cup. Deeply sweet, umami-laced acidity; crisp, silky mouthfeel. Expressive, harmonious, complete finish.
Notes
Produced by Paul and Kevin Doyle of Finca Mikava, entirely of the Gesha variety of Arabica, and processed by a hybrid washed method involving a double-phase fermentation in sealed tanks filled with carbon dioxide, first in whole cherry and again after depulping. Mossto from the first fermentation is added, along with an additional amount of mossto from the two prior fermentations. Fermentation continued for approximately two additional days until the desired PH was reached.
