Blind Assessment
Sweetly aromatic and fruit-centered. Notes of strawberry compote, rose, honeydew melon, cocoa powder and lemongrass in aroma and cup. Rounded acidity; silky, buoyant mouthfeel. The finish is clean and gently floral with lingering strawberry and cocoa.
Notes
Produced by the Restrepo family of Finca Chambaku, entirely of the Pink Bourbon variety of Arabica, and processed by a proprietary method involving culturing fermentation, which combines fruit and selected yeast cultures to trigger complex metabolic reactions during fermentation. SÖT Coffee Roaster, based in Osaka, Japan, is a self-described Swedish-style roaster with an “aggressively light” roasting style. For more information, visit www.sotcoffee.com.
Bottom Line
An engaging, modern Pink Bourbon — floral and fruit-sweet with a smooth mouthfeel and subtle fermentation complexity.
