Blind Assessment
A ready-to-drink black coffee, tested cold. Deep-toned, rich-tart-savory. Asian pear, pipe tobacco, pink peppercorn, blood orange, cocoa nib. Brightly sweet, delicately tart acidity; round, plump, very smooth mouthfeel. Crisply sweet-savory finish. Milk brings up the richness and savory impulses while also highlighting pipe tobacco notes.
Notes
Prepared by the cold-drip method, in which a controlled dripper brews the coffee over 4-6 hours in the refrigerator, at a coffee to water ratio of 1:15. which involves prolonged steeping of ground coffee in cold water. Contains no additives or ingredients other than coffee and water. The green coffee used is a Castillo produced by Wilton Benitez of Finca El Paraiso 92, processed by the anaerobic natural method. GK Coffee is a nano-roastery in Yilan, Taiwan that offers both retail and wholesale coffee. For more information, visit www.gkcoffee.com.tw or email gkcoffee2015@gmail.com.
Bottom Line
An evocative, nuanced, downright elegant slow-drip RTD made with an anaerobically processed Wilton Benitez Castillo — a beauty.
